Pea Puree

Minted pea puree looks and tastes great alongside fish or chicken.
Serves: 4
  • 1 tsp oil
  • 1 Onion, chopped
  • 500g Frozen Garden peas
  • 1 tbsp fresh Mint, chopped
  • 1 tsp Pepper
  • 170g Carnation Evaporated Milk

Here's how easy it is...
  1. In a deep saucepan, fry the onion in oil until glassy and cooked. Add the peas and Carnation Evaporated Milk and bring to a gentle simmer for 5min. Stir occasionally.
  2. Add the fresh mint, blend and then season. Return to a gentle heat for 2 minutes.
  3. Ensure puree is piping hot before serving.
