Basundi
Basundi is a traditional Western Indian dessert of thickened & sweetened milk that is flavoured with fragrant spices. Rich and delicious, it's typically served as a dessert during Indian festivals like Diwali, Holi, Raksha Bandhan, Bhai Dooj, and Gudi Padwa.

Full fat milk
Cardamom powder
Saffron strands
Almonds, chopped
Cashews, chopped
Pistachios, chopped
To serve:
Dried fruit, chopped
Step 1 of 3
Add the milk and condensed milk to a large non-stick saucepan and bring to a boil, stirring continuously so the mix doesn’t stick or burn to the bottom of the pan.
Step 2 of 3
Add the cardamom, almonds, cashew nuts and pistachios to the pan. Make sure everything is stirred in then bring to a simmer for a minute before turning off the heat completely.
Step 3 of 3
Leave the mixture to cool slightly before decanting into your chosen serving dishes. You can either pop the dishes into the fridge until completely cool and serve cold or serve immediately. Top with the dried fruit before serving and enjoy!
