Try this delicious spin on our Millionaire's shortbread. Instead of swirling the white chocolate in to the dark chocolate, swirl in the dark chocolate in to the white chocolate for a marbled effect. These layers of crumbly shortbread, sticky caramel and chocolate will also hit the jackpot.

For the base:

Shortbread biscuits, crushed

250g

Cocoa powder

4tbsp

Melted butter

55g

For the caramel layer:

Dark brown soft sugar

150g

Butter

95g

For the top layer:

White chocolate

200g

Dark chocolate

55g

Edible glitter

½ tsp gold

You will also need…

20cm (8in) brownie tin, lined with baking parchment

Billionaire's Shortbread

Combine the crushed biscuits, cocoa and 55g melted butter, press into the tin. Chill for 20 mins.

The mixture should be like slighlty wet sand when you press it into the base.  If it feels a little dry you can put the mixture into a microwave safe bowl and microwave gently for 10-20 seconds which will re-melt the butter and help everything to combine together.

Heat the sugar and remaining butter in a non-stick pan gently, stirring, until melted. Add the Carnation condensed milk and bring to a rapid boil, stirring continuously. Cook for a minute or so or until the filling has thickened. Pour the caramel over the base. Cool, then chill until set.

Billionaire's Shortbread

Melt the chocolate in separate bowls. Pour the white chocolate over the caramel and then add spoonfuls of the melted dark chocolate. Swirl together with a spoon for a marbled effect.

Chill until set then lightly brush over the gold edible glitter. Remove from the tin and cut into squares – dip your knife in hot water (then dry on kitchen towel) to make it easier to cut through the chocolate.

Keep in an airtight container in the fridge for up to 2 weeks!

I am now making the shortbread base from scratch too and this caramel is to die for! I’ve put some light soft brown sugar with the dark and it gave a different flavour, I’ve cooked it a bit longer and it’s given a firmer caramel, omg it’s lovely. I only use milk chocolate as not a fan of white choc and every time it’s been fabulous

Rated 4 out of 5 by from Wonderful but Pleased I read reviews first as I would have made the same mistake as another user. Think your recipe needs a tweak. Instead of 55gms of butter & 150gms it should be 55 gms & (150-55)=95 gms. I agree in Step 2 you, Carnation , do state ‘rest of butter’ but confusing. Much better to state the individual amount for each step. Otherwise AMAZING!! Friends, neighbours. Everybody loves it!!

Rated 1 out of 5 by from caramel shortcake tried this and it totally failed ended up with a kind of greasy looking fudge, i am not sure if 150g butter is to much and more than likely i have over cooked the caramel probably will just stick to the way i have always done it
