Pistachio Kulfi
Kulfi is a traditional Indian frozen dairy dessert, often described as a denser, creamier version of ice cream. It's made by slowly simmering milk until it thickens and caramelises, then flavouring it with ingredients like cardamom, saffron, pistachio, or rose. Unlike ice cream, kulfi is not churned, resulting in a denser, richer texture.

Whipping cream
Cardamom, ground
Vanilla extract
Almonds, ground
Pistachios, ground
You will also need:
Kulfi or ice lolly moulds
Step 1 of 3
Add the condensed milk, evaporated milk and cream to a pan and bring to the boil. Simmer for 20-25 minutes, stirring constantly until thickened and reduced. Stir in cardamom and vanilla. Remove from heat and cool completely.
Step 2 of 3
Mix through the ground nuts and pour into the moulds. Freeze for 4-5 hours or until completely frozen.
Step 3 of 3
Once fully frozen, dip the moulds into hot water to help the Kulfi release. You can decorate them with chopped nuts for an extra special touch but they're delicious on their own!
