This classy concoction waltzes matcha green tea's earthy vibes with coconut's creamy decadence, creating a flavour duet that dances on your tongue. Perfect for flavour adventurers, this DIY gourmet delight skips the fancy gadgets, letting you whip up a taste of holidays right at home.

Coconut & Matcha Ice Cream

Coconut milk, cold

400ml

Matcha powder

8g

Fresh coconut, grated

60g

You will also need:

A 900g loaf tin or freezer safe container

Step 1 of 3

Add the cold coconut milk, condensed milk and matcha to a bowl and using an electric hand whisk on a medium speed, whisk until uniform and slightly thickened.

Step 2 of 3

Mix through the grated coconut then decant the mix into a freezer safe container and pop in to the freezer for 4-5 hours or until fully frozen.  

Step 3 of 3

When ready to serve, take out the freezer to soften for 10 minutes then scoop and enjoy!

If you're having trouble scooping your ice cream, carefully fill a mug or jug with hot water and dip your ice cream scoop into the water before scooping.
