Blueberry Mallow Rocky Road

It's so quick to make these gorgeous chocolatey treats. We've added our favourite fruit, nuts and marshmallows but you can make it your own!

  • 200g dark chocolate, chopped
  • 200g Carnation Condensed Milk
  • 25g butter
  • 100g brazil nuts, roughly chopped
  • 85g dried blueberries
  • 200g mini marshmallows
  • 85g Nestlé Milkybar

Here's how easy it is...
  1. 1. Place the chocolate, condensed milk and butter into a large bowl. Microwave on full power in 30 second bursts, stirring frequently until melted. Beat until smooth and then stir in the nuts, berries and marshmallows.
  2. 2. Divide the mixture into 16 small mounds on a parchment lined baking sheet.
  3. 3. Melt the white chocolate in a microwave for 30 seconds to 1 minute. Drizzle over the top of the rocky roads and leave to set. Keep in the refrigerator an airtight container for up to 1 week.

    I made this with cranberries instead of blueberries... Super easy and really tasty!

    I love rocky road. However I substitute the blueberries with 100g of digestive biscuits. I find that this improves the texture and is really tasty!

    Do you think you could use carnation caramel instead of condensed milk??

    Hi Amanda, we've not tried this although the process would be the same. You may find you get a slightly different texture and the flavour will be stronger. Why not give it a go and let us know?

    I made this but omitted the nuts, used dried cranberries instead along with the blueberries, put it into sweet paper cases and used them after a birthday meal, everyone loved them.
