Lemon Cream

Easy peasy lemon squeezy! Sweet, creamy and lemony pots topped with a fresh mint syrup. A true taste of summer.
Serves: 6
  • 397g can Carnation Condensed Milk
  • 150ml double cream
  • finely grated zest and juice of 4 large unwaxed lemons (about 150ml)
  • To serve
  • 1tbsp fresh mint leaves
  • squeeze of lemon juice
  • 1tsp granulated sugar
  • lemon zest
  • fine biscuits

Here's how easy it is...
  1. 1. Beat the cream to softly whipped peaks.
  2. 2. Combine the lemon zest and juice with the condensed milk, the mixture should thicken.
  3. 3. Fold the whipped cream into the condensed milk mixture until combined. Spoon the lemon cream into six small dishes or wine glasses and chill until ready to serve.
  4. 4. To serve very finely chop the mint leaves and mix with a squeeze of lemon juice and the sugar (pound to a sauce with a pestle and mortar if you have one). Add a teaspoonful of the sweet mint sauce to each dish and serve curls of lemon zest and fine biscuits.
  5. Try swapping the 4 lemons for 5 limes!

    Just made this and it is delicious! Just the right amount of zingyness. It's setting in the fridge now so I'm going to make some madeleines now to serve with it tonight. Very easy too.

    Easy to make, but extremely rich and sickly. Not a fresh tasting lemon dessert.

    I made this and it tastes really indulgent. Better the next day as it had set a bit more. Froze what was left and OMG, the best frozen dessert I have accidentally made.
