Make these delicious fudge truffles as a gift or a delicious after dinner treat. If you've made Carnation Ultimate fudge then this will be a breeze, if not stick closely to the steps – once mastered, the results are out of this world!

Vanilla Fudge Truffles
Great texture/colour! I didn't have vanilla and used buttery spread, taste and texture really good because of canned milk!

Semi-skimmed milk

150ml

Caster sugar

450g

Unsalted butter

115g

Vanilla extract or paste

1tsp

Cocoa powder or edible glitter for dusting

Large heavy bottom saucepan

If you've made Carnation Ultimate fudge then this will be a breeze if not stick closely to the steps – once mastered the results are out of this world! Place all the ingredients into a large non-stick saucepan and melt over a low heat, stirring until the sugar dissolves

Bring to the boil then simmer for 10-15 minutes, stirring continuously and scraping the base of the pan. Take care while the mixture boils and during stirring as the fudge will be VERY hot! To test its ready drop a little of the mixture into a jug of ice-cold water. A soft ball of fudge should form or check with a sugar thermometer if you have one (approx 116-118°C).

Step 3 of 4

Remove from the heat and beat the fudge until very thick and starting to set (about 10 minutes). If you have an electric beater this will be easiest otherwise try a wooden spoon and some elbow grease.

Step 4 of 4

Allow to cool until the fudge is warm to the touch then roll teaspoon sized portions into neat balls and dust with cocoa powder or edible glitter.
