Vanilla Fudge Truffles

Make these delicious fudge truffles as a gift or a delicious after-dinner treat.

  • 397g Carnation Condensed Milk
  • 150ml semi-skimmed milk
  • 450g caster sugar
  • 115g unsalted butter
  • 1tsp vanilla extract or paste
  • Cocoa powder or edible glitter for dusting

Here's how easy it is...
  1. If you've made Carnation Ultimate fudge then this will be a breeze if not stick closely to the steps – once mastered the results are out of this world! Place all the ingredients into a large non-stick saucepan and melt over a low heat, stirring until the sugar dissolves.
  2. Bring to the boil then simmer for 10-15 minutes, stirring continuously and scraping the base of the pan. Take care while the mixture boils and during stirring as the fudge will be VERY hot! To test its ready drop a little of the mixture into a jug of ice-cold water. A soft ball of fudge should form or check with a sugar thermometer if you have one (approx 118°C).
  3. Remove from the heat and beat the fudge until very thick and starting to set (about 10 minutes). If you have an electric beater this will be easiest otherwise try a wooden spoon and some elbow grease.
  4. Allow to cool until the fudge is warm to the touch then roll teaspoon sized portions into neat balls and dust with cocoa powder or edible glitter.
