These brownies are very chocolatey, slightly chewy with a slightly squidgy middle and a lovely crisp flaky top!

This is our classic fudgy chocolate brownies - but they can easily be adapted if you want to include chopped walnuts, pecans or chunks of vegan white or milk chocolate.  Simply stir them through the brownie mixture in step 5 with the dark chocolate.

Vegan dark chocolate, chopped into small chunks

Self-raising flour

200g

Cocoa powder

3tbsp

Caster sugar

120g

Sunflower oil

5tbsp

Vegan milk alternative (unsweetened)

120ml

You will also need:

22cm brownie tin, lined with baking parchment

Step 1 of 8

Preheat the oven to 180°C (160°C for fan ovens), Gas Mark 4.

Step 2 of 8

Melt 150g of the chocolate in a microwave gently in short bursts, keeping the rest of the chocolate to fold into the mixture later.

Mix the dry ingredients in a large bowl.

Mix the wet ingredients in a separate bowl, add the melted chocolate then pour everything into the flour mixture and mix until combined (it will be quite thick that’s fine!).

Mix in the remaining chopped chocolate.

Spoon the mixture into the prepared tin and bake for about 35 minutes or until the brownie is cooked in the centre (a knife should come out with a moist crumb but not wet batter).

Leave the brownies to cool in the tin for 5 minutes before transferring to a wire rack.

Serve while still warm with some vegan ice cream.

Rated 5 out of 5 by from So tasty! Non vegan daughter loved them! Made these tonight as part of my Veganuary pledge. I cooked mine for 45 minutes rather than 30, and tbh, another 5-10 minutes wouldn’t have hurt them. When I turned it out of the tin, it was still very fishy and moist, so we had some (a lot of) disintegration. However, they were really nice served with vegan ice cream. They are very rich! Could happily be cut into 16 rather than 20 and it would be enough. I would definitely make again. So easy too!

However, they were fudgey and had a really nice chocolate flavour without being too bitter. Although when first out of the oven they were very Cakey but once left over night and cooled it left a great texture. Highly recommend this recipe.
