Here's how easy it is...
  1. Place the sugar in a thick bottomed saucepan and melt over a low heat, stirring occasionally, until caramel brown in colour.
  2. Add the chopped banana and lemon juice and mix well. Cook over a gentle heat for 2–3 minutes, until the caramel and banana softens, then remove from the heat and allow to cool.
  3. Mix together the condensed milk, cinnamon and creams, add the caramel banana mixture and stir well.
  4. Pour the mixture into a shallow plastic box and freeze until slushy (about 2–3 hours). Beat the mixture with a fork, then stir in the fudge pieces. Freeze again overnight.

Can you make this without banana?

    Carnation says:
Hi Lucy, the banana does add to the lovely texture of this ice cream. We've not tried leaving it out if this recipe but if you don't like bananas give it a go and let us know!

    Carnation says:
Hi Liz, oops! Thanks for picking this up - yes the recipe should have 200g ready made fudge pieces in the ingredients list. We'll amend this asap!
