Peppermint Creams
Such a nice recipe, I can make them as minty as I like! Made for Christmas as 'keep them quiet before lunch' nibbles, they went...
Sue04

Icing sugar, sift

225g

Natural peppermint extract

1-2 tsp

Edible glitter

Plain chocolate, melted

55g

You will also need:

small icing or biscuit cutters

Step 1 of 3

Put the icing sugar into a bowl and gradually mix in the condensed milk to make a soft dough (you may not need all the condensed milk). Add the peppermint extract and mix until you have a smooth, kneadable dough.  Add a little more icing sugar if the mixture gets too sticky.

Step 2 of 3

Dust a clean surface with plenty of icing sugar and roll out the mixture to 5mm (¼") thickness. Cut into shapes with the icing or biscuit cutter or you can cut them however you like with a knife. Chill in the fridge for 1-2 hours or leave in a cool place to dry (about 2-3 hours).

Step 3 of 3

Drizzle the peppermint creams with the melted chocolate or dip to coat one half. Allow to set. Keep refrigerated in an airtight container and use within 3 weeks.

You could cut these into thin squares and when dry dunk them gently into melted dark chocolate until they are completely coated.  Leave to set for home made version of After Eights!
