Here's how easy it is...
  1. Break the meringues into small pieces – but not too small.
  2. Whip the cream to soft peaks and then stir in the condensed milk. Add the lemon zest and juice – the mixture should thicken.
  3. Mix the berries with the jam.
  4. Pour a few spoonfuls of the cream mixture to just coat the base of the tin. Sprinkle over half the meringues and then scatter over half the jammy berries. Repeat the layers finishing with the cream mixture.
  5. Wrap the cling film over the top of the tin and freeze for 4 hours or overnight. Remove from the freezer 15 minutes before serving.

Could you please recommend an alternative to the meringue that is egg free?
    Thanks

Hello Helen, the meringues in this recipe gives the dessert a lovely texture. There are some meringue recipes out there that use chickpea water instead of egg whites if you fancy experimenting! As an alternative, you could add toasted almonds. However this will adjust the flavour.

    Hi there,
I have a severe egg allergy in the house...any suggestions to substitute the meringue in this recipe? Thanks

    Carnation says:
Hello Helen, why not try adding some toasted nuts or break up some of your favourite cookies to add a little crunch.
