Here's how easy it is...
  1. Preheat the oven to 180°C, (160°C for fan ovens), Gas Mark 4.
  2. Place the cupcake ingredients in a bowl and beat with an electric hand mixer for 2-3 minutes until light and fluffy.
  3. Spoon into the cupcake cases and bake for approximately 15-18 minutes until springy to touch and golden brown. Cool slightly then transfer to a cooling rack to cool completely.
  4. To make the icing, tip the soft cheese into a large bowl and sieve the icing sugar over it. Use a soft spatula to mix thoroughly until smooth.
  5. Once the cupcakes are completely cooled use a teaspoon to remove a little cake from the top of each. (Keep the cake to one side) Fill each hole with a teaspoon of Carnation Chocolate filling and topping. When all the cupcakes are filled pipe the icing over the top of chocolate.
  6. Finally rub the cake piece cut-outs against a fine grater to create red crumbs and use these to decorate the tops of the cupcakes.
