Chocolate Ice Cream and Caramelised Orange Pancakes

Chocolate ice cream with freshly made warm pancakes. Delicious with caramelised orange slices.
Serves: 6
  • For the crepes
  • 150g plain flour
  • 2 eggs
  • 300ml milk
  • 15ml vegetable oil
  • Extra oil for frying
  • For the oranges
  • 3 oranges
  • 50g caster sugar
  • 50 ml water
  • For the ice cream
  • 363g Carnation Chocolate filling and topping
  • 2 large egg whites
  • 50g caster sugar
  • 100 ml water

Here's how easy it is...
  1. For the ice cream:
    Make the ice cream the night before. Place the caster sugar in a small saucepan and cover with the water. Bring to the boil without stirring and cook until the syrup reaches soft ball stage.
    Beat the egg whites until they start turning white and fluffy, slowly pour in the hot syrup. Continue to beat until cool and glossy. The meringue will double in size. Give the Carnation Chocolate filling and topping a stir to soften then fold in the cooled meringue. Freeze overnight.
  2. For the oranges:
    Cut the skin off the oranges and slice. Place the sugar and water into a shallow pan and boil until the syrup begins to turn golden brown. Add the oranges and cook for 1 minute.
  3. For the crepes:
    Sieve the flour into a large bowl. Whisk in the eggs, oil and milk until smooth. Cover and leave to rest for 2 hours.
  4. Pour a little oil into a hot non-stick pan; pour in enough batter to cover the bottom of the pan. Cook for 1 minute, flip and cook for another minute until golden and cooked. Transfer to a plate and cover to keep warm.
  5. Fill the crepes with the caramelised oranges and chocolate ice-cream.
