Quiche Lorraine

This summer classic is a great savoury addition to a garden picnic.
Ingredients
Serves: 6
  • 1 tsp oil
  • 4 rashers bacon, diced
  • 1 onion diced
  • 100g reduced fat cheddar cheese, grated
  • 1 large egg
  • 170g Carnation Evaporated Milk
  • 1 baked pastry case (200g)
  • Serve with mixed salad
  • 2 tomatoes
  • 1 bunch spring onions
  • 400g mixed leaves
  • 15ml light French dressing

Here's how easy it is...
  1. Preheat the oven to 180C (160C with fan) gas mark 3.
  2. Heat the oil in a large non-stick frying pan add the diced onion and cook till soft. Add the bacon and fry till cooked and beginning to brown. Pour the mix into the pastry case and sprinkle over the cheese.
  3. Break the eggs into a bowl and add the Carnation Evaporated Milk. Whisk until combined and then pour into the pastry case covering the filling.
  4. Bake for 30 minutes until set and golden on top.
