Caramel parfait
"Most recipes require an expensive machine to make perfect ice cream, but not this one! Parfait means ‘smooth’, and this recipe really is silky smooth and dead simple – trust me, you can’t fail. The Munchies® make a great addition to the smooth textured parfait."

Ingredients
- 115g (4oz) butter
- 55g (2oz) caster sugar
- 55g (2oz) dark brown soft sugar
- 200g (7oz) Carnation Condensed Milk
- 150ml (¼pt) milk
- 300ml carton double cream
- 2 packets Nestlé Munchies®, chopped
Method
- Make the caramel: place the butter and sugars in a non-stick saucepan over a low heat, stirring until the butter melts and the sugar dissolves. Add the condensed milk and bring gently to the boil, stirring continuously to make a golden caramel. Carefully stir in half the milk and leave to cool completely.
- Line a 900 g (2 lb) loaf tin with a double layer of cling film.
- Whip the cream with the remaining milk until just thickened. Gently fold in the caramel and the chopped Munchies, then pour into the prepared tin. Freeze overnight.
- To serve, turn out the parfait onto a serving plate. Remove the cling film and cut into slices.
