Kheer Jewelled with Dried fruit

Ingredients
- 25g (1oz) raisins
- 85g (3oz) dried apricots, chopped
- 100g (3½oz) pudding rice
- 1tbsp rose water
- 3 strands saffron
- 3 cardamom pods
- 397g can Carnation Condensed Milk
- 25g (1oz) almond slivers
- 25g (1oz) pistachios, chopped
To finish, chopped pistachio
Method
- Soak the dried fruits in a little hot water, to cover. Meanwhile place the rice in a pan with the rose water, saffron and cardamom and 600ml water, heat gently and bring to the boil. Simmer very gently for 20 minutes.
- Add the dried fruits and soaking water. Pour the condensed milk into the pan and heat for a further 10 minutes, stirring continuously. Add the almonds and chopped pistachios and take off the heat. Serve warm, finished with chopped pistachio.
