Kheer Jewelled with Dried fruit

  • 35 mins
  • Serves 4

Ingredients

  • 25g (1oz) raisins
  • 85g (3oz) dried apricots, chopped
  • 100g (3½oz) pudding rice
  • 1tbsp rose water
  • 3 strands saffron
  • 3 cardamom pods
  • 397g can Carnation Condensed Milk
  • 25g (1oz) almond slivers
  • 25g (1oz) pistachios, chopped

To finish, chopped pistachio

Method

  1. Soak the dried fruits in a little hot water, to cover. Meanwhile place the rice in a pan with the rose water, saffron and cardamom and 600ml water, heat gently and bring to the boil. Simmer very gently for 20 minutes.
  2. Add the dried fruits and soaking water. Pour the condensed milk into the pan and heat for a further 10 minutes, stirring continuously. Add the almonds and chopped pistachios and take off the heat. Serve warm, finished with chopped pistachio.
